Malteser Traybake

So, to carry on the theme of Maltesers from last week, they feature again in today’s baking.
(also they are on offer in the supermarket, which is quite handy!)

It’s probably not the best of weather to make something which is probably 80% chocolate, but I reckon these won’t last long anyway – they are delicious!

I found the recipe online, and used Galaxy honeycomb chocolate for half the chocolate needed, to complement the Maltesers.

Here’s the recipe…

These chocolate chip cookies are another favourite from the Hummingbird Recipe book.

Take your pick from milk chocolate or white chocolate chip!

Blueberry muffins

So, after a few weeks of celebrations and holidays I’ve got back into the baking (and after the complaints at work of a lack of baked goods!)

These are from the Hummingbird Bakery recipe book and look good enough to eat 🙂

Nectarine muffins

So….what to do with the nectarines I bought a week ago but haven’t actually eaten yet – well, nectarine muffins obviously! 🙂

Here’s the recipe if you want to give them a go; I found the mixture a bit stiff so added some extra milk and oil. I also added a teaspoon of ground cinnamon and some ground ginger for extra taste….

Cake pops

This week I decided to try out my cake pop moulds.

You make the cake mixture and bake them in a silicon mould, then once the cakes are cool, dip them in chocolate and then decorate them. I used chocolate popping candy and gold and silver star sprinkles from Sainsburys.

They went down well at work!

White Chocolate Cranberry Muffins

These are a quick, easy recipe – I had some dried cranberries to use up so searched for a recipe online:

http://www.foodnetwork.co.uk/recipes/white-chocolate-cranberry-muffins-ru335904.html

(it made 16 muffins, rather than the 12 stated)

The results were pretty good and went down well in a meeting at work!
