Sticky toffee cupcakes

I decided to stay on the seasonal cupcakes theme and make some sticky toffee cupcakes for bonfire night.

The recipe’s from the Hummingbird Cake Days iPhone app. They came out really well (I used double the amount of caramel in the frosting to make it taste even better!)

Scary Halloween cupcakes

So it’s Halloween this week, which obviously means Halloween-themed cupcakes.
Last year’s spider web ones were soon demolished at our Halloween party…

But I decided to try something a bit different, and inspired by the amazing eyeball cake-pops that my sister made last year

These red velvet ones turned out well (although I still can’t seem to find a red dye that doesn’t bake out when cooked…)

I used smarties for the irises and black food colouring pen for the pupils. Also I found I needed about 3 cups of icing sugar so it wasn’t too runny.

Nic’s vegan Birthday Cake

I made this chocolate cake for my friend Nic’s birthday.

It actually has no eggs or dairy, so is perfect for vegans and you can’t even tell that it’s dairy-free. It got lots of good comments on the taste and is nice and moist as well.

Rocky road

So as a change from cupcakes I decided to make some rocky road slices.

They’re from the Hummingbird bakery cookbook which as you know is the best one I’ve found as the recipes are so reliable in that they always turn out well – and most importantly, taste great!

Oatmeal & raisin cookies

Another classic from Hummingbird!

This comes from their Hummingbird bakery cookbook.

They taste really great warm and with cold milk, but as I don’t have a carry-around warmer most of you will have to enjoy these cold! Apologies to the guys in Finance that you didn’t have any today so will have to wait until Thursday & Aggie will probably be pleased as she can’t eat raisins so won’t be tempted away from the Atkins diet!

Butterfly Magnolia bakery cupcakes

I used the same recipe as for the Baby blue cupcakes but used different cupcake wrappers and decorated them with butterflies (edible wafers) – let’s hope they go down well at work!

Baby blue cupcakes for baby Jack

I made these cupcakes for lunch with my friends and to see Caroline & Mark to meet their new baby, Jack.

While searching for a recipe I found this one for chocolate cupcakes from the Magnolia bakery. Being a big Sex and the City fan I thought it would be great to give them a go (and I also never made it to the bakery when I was in. New York earlier in the year).

They have a slightly denser texture but are quite moist, plus the icing isn’t too sweet so makes it a great combination.

Blueberry cake

So I think that the Hummingbird recipe book always creates the best bakes and this was no exception.

I got a ring mould for my birthday to try these recipes and was also grateful for the large cake tin my aunt, uncle and cousins had given me for Christmas when I realised that it wouldn’t fit in my round storage tin!

I would give the usual warning about fruit in cakes and avoiding them sinking, plus the recipe made so much mixture that I also made 6 muffins in addition to the cake.

It rose quite a lot!

Spinach, feta and sun-dried tomato muffins

My friend Aggie organised a picnic in Greenwich park for her boyfriend Rory’s birthday so I decided to bake some savoury muffins to take along.

These are pretty simple to make and taste a bit like a cheese scone with vegetables in. They we’re demolished in a flash!

Zucchini cupcakes

Okay, so cupcakes with courgette in might not sound that great, but they’ve made the top of some peoples’ lists!

The recipe makes a great cupcake that’s really moist and the cream cheese frosting really adds the flavour.
