Carrot cake cupcakes

Regular readers will know that I’m a big fan of the Hummingbird cook book as whenever I make a recipe it always comes out well. According to my housemate these are no exception!

 
Carrot cake has been requested a few times recently so I decided to make some, but as cupcakes instead of a big cake as lots of people tend to prefer their own personal mini cake!

The Hummingbird Bakery have a section on their website of Recipe FAQs and state that you can just use their carrot cake recipe to make cupcakes. I found it made 24 cupcakes, though there was a LOT of icing and I still have some left over after icing all 24.

A special cake for World Baking Day

I’ve had a couple of weeks free from baking so thought I should do something special for World Baking Day today. 

This is a recipe for a cake from one of my favourite cake shops – Konditor and Cook. It’s their Curly Whirly cake; a rich chcolate cake covered in a vanilla bean cream-cheese frosting.

More than a bakers dozen

I haven’t made biscuits for a while so decided to do some chocolate chip cookies – always a big hit!

I used a recipe from the never-fail Hummingbird Bakery cookbook and adapted it, using dark chocolate chunks and chopped, roasted hazelnuts:





They made quite a few more than the specified 24 in the recipe…

Lovely lemon drizzle cake

It’s been requested a few times recently so I’ve made a lemon drizzle cake – actually 2, so there’s enough to go round!

Rock cakes!

I had a busy Easter weekend seeing friends & family so didn’t have time for much baking, except for a few more Easter nests for some friends I went to visit.

I got a lot of grief today for the lack of cakes; mainly from those of you on the 20th floor! So by popular request I’ve made some rock cakes for tomorrow.

Easter Baking

Today I thought I should make some Easter-themed goodies.

I decided to go with a traditional favourite – and they’re simple to make!

I used this recipe and filled the chocolate cornflake nests with some mini eggs and mini creme eggs.

Rocky Road

This ALWAYS goes down well at work!

I used Nigella’s recipe from her book ‘Nigella Express’. They are fairly easy to make as they only have a few ingredients; butter, chocolate, golden syrup, rich tea biscuits and marshmallows.

They look good finished with a dusting of icing sugar:

Mother’s Day biscuits

I made these coffee and walnut biscuits for my Mum for Mother’s Day.

They are light and crispy. I used letter stamps (you can buy them from Lakeland) to stamp ‘Happy Mothers Day’ on the larger biscuits.

Chocolate banana muffins

These are a favourite; quick and easy to make – as well as eat!
Plus I still have some very ripe bananas to use up….

The recipe is adapted from one of Nigella’s. I made some with a spoonful of Nutella in the middle and some with white chocolate chips in.

Chocolate marble banana bread

So I needed a recipe to use up some overripe bananas and also the chocolate ganache frosting from my birthday cake yesterday.
